The Raw Material of Galapagos Gastronomy
The raw material for Galapagos gastronomy comes mainly from the marine and agricultural environment of the archipelago:
Local Markets: Local fishermen sell their fresh catch to markets and restaurants, ensuring that ingredients are fresh and available for chefs to prepare local dishes.
Local Agriculture: Agricultural products such as bananas, potatoes, and organic coffee are grown in the higher elevations of the islands. The Arabica coffee grown here has a Denomination of Origin due to its superior quality.
Sustainable Fishing: Fishing in Galapagos is regulated by the Galapagos National Park to protect marine species. This includes the capture of lobsters and other shellfish, ensuring that it is done in a sustainable manner to preserve the local ecosystem.
